IS (Image stabilisation) is it worth the extra couple stops?

I started of with a eos 550d with the 18-55 IS kit lens (which actually impressed me a little, thought it was going to be a lot worse than it is), then somewon bought me the 55-250mm IS zoom lens (lovely cheap zoom lens for scouting out locations when you dont fancy carrying loads of kit around). Now both have IS which i always have on, just cause its there really.

Then i bought a tamron 28-75 lens with no IS which i love and find now i dont miss the IS at all.

As now im buying a 70 200 l and probably going for the f4 non-is version, my question is,

Are the extra couple of stops you can get or the IS itself actually worth it? Could you live without IS?
